What exactly are gratuities? I know there is a proper Latin definition in the encyclopedia, but I always defined gratuities as a customer’s way of saying Thank You for great service. I’ve received gratuities ranging from 0%-200%. The average amount of gratuity is usually between 10%-20%.

Crappy service doesn't deserve gratuities! That is where I believe most servers get confused. They think the minute someone walks in the door...here comes another 15-20%. I disagree. I think most servers should change their mindset.

Gratuities are earned!!! Most hospitality industry workers I know tip very well. That being said, I know that we would never tip on really bad service.

Work in a busy establishment, serve a lot of customers, deliver GREAT service to your customers (without the expectant attitude) and you should be able to make a terrific living off your gratuities.

Always put yourself in the place of the customer.
What kind of service do you expect?

Give that service to your customers (or better) and you'll be surprised at the amount of gratuities you'll be bringing home.
